There is a particular kind of hospitality professional who never puts their own name on a building, yet has quietly shaped how an entire generation of Indian brands look, taste and run. Ketan Dave is one of them. As an independent hospitality consultant in India, he has spent fifteen years inside the biggest names in global food and hospitality, McDonald’s, ITC, a cruise line the size of a small city, and now works with the founders who need someone who has actually done the job, not just advised on it.

Today he runs his own restaurant and hotel consulting practice out of India, and the résumé behind it reads less like a career and more like a tour of how hospitality gets built at scale.

A Foundation Built Far From Home

Dave’s grounding in hospitality did not begin in India. It began in Las Vegas, where he trained in hotel management inside one of the most demanding and competitive hospitality markets on the planet. Vegas does not forgive sloppy operations, every property on the strip is fighting for the same guest, and the standards Dave picked up there, on speed, consistency and guest experience, became the backbone of everything he built afterward.

From Las Vegas he moved into an entirely different kind of scale challenge: Food and Beverage Director at Carlene Cruise, the world’s largest cruise line operator. Feeding thousands of guests a day, across multiple restaurants, on a vessel that cannot simply restock from the nearest supplier, forces a different kind of operational discipline. It is hospitality without margin for error, and it shaped how Dave thinks about systems long before he ever built one of his own.

The Youngest GM to Bring Coffee Culture to Asia

Dave’s next chapter is the one most people recognise, even if they do not know his name. At McDonald’s, he became the youngest General Manager for Asia, and was handed a mandate that would go on to change how the region drinks coffee: launch and scale McCafe across the continent.

Building a premium coffee vertical inside the world’s largest fast-food brand meant balancing two things that rarely sit comfortably together, McDonald’s global consistency and the wildly different coffee habits of markets from Tokyo to Jakarta. Dave built the playbooks that made it work, and McCafe went from a pilot idea to a continent-wide fixture of Asian QSR consulting case studies. It remains one of the clearest examples of what happens when a global system is adapted with genuine local intelligence, rather than simply copied and pasted.

Luxury Hospitality Standards, South Indian Reality

From fast food to fine hospitality, Dave then headed south India operations for ITC Group’s hospitality wing, one of India’s most respected conglomerates. The brief here was different again: hold luxury service standards at properties across South India while keeping commercial performance sharp. Anyone who has worked in luxury hotel consulting knows how easily those two goals pull against each other. Dave’s time at ITC deepened his understanding of what premium Indian hospitality looks like when it is done at real scale, and that understanding shows up in how he advises hotel clients today.

He went on to become Group CEO of Shree Balaji Group, where the challenge expanded beyond hospitality into a multi-million-dollar portfolio spanning luxury malls, retail ecosystems and hospitality hubs. Governing that many moving parts under one strategic vision is less about any single skill and more about discipline, the same discipline that traces all the way back to those early years in Las Vegas.

Taking Mr. Idli Toward an IPO

If there is one chapter that defines Dave’s current standing in Indian hospitality, it is Mr. Idli. As CEO, he took a beloved South Indian brand, born in a small space in Kuvempunagar, Mysuru, back in 2009, and turned it into a scalable, investment-grade business.

Under his leadership, Mr. Idli architected the FOCO model, Franchise Owned, Company Operated, where investors share in the financial upside while the company retains full operational control. It is a structure that protects the one thing hospitality brands lose fastest when they franchise carelessly: consistency. Under that model, Mr. Idli scaled past 250 outlets across cities including Bengaluru, Lucknow, Gurgaon, Noida and Hyderabad, and expanded internationally into the USA, UK and Malaysia.

Dave then set a five-year roadmap targeting 1,000 stores globally, with 54 new strategic locations mapped out and expansion into Singapore and Thailand on the horizon. Alongside the physical growth, he drove the technology integration and supply chain automation the brand needed ahead of what is shaping up to be one of Indian food and beverage’s most closely watched public listings.

His own words capture the philosophy behind all of it: “Our vision extends far beyond culinary excellence; it encompasses a world where every individual can savour heritage, no matter where they are.”

Why Founders Call This Restaurant and Franchise Consultant Before They Build

Having sat on the operator’s side of nearly every major hospitality challenge, from a single kitchen to a multi-country franchise network, Dave now brings that experience directly to founders and investors as an independent hospitality and restaurant consultant. His practice covers the full arc a hospitality brand needs to survive its own growth: restaurant and QSR consulting, hotel strategy, franchise and expansion architecture, and the unglamorous but decisive work of operations, SOPs and staffing.

What sets his approach apart is the refusal to treat any of these as separate problems. A restaurant that opens beautifully but cannot hold its standard at outlet fifty was never really solved in the first place. Dave’s engagements are built to prevent exactly that gap, launches that happen on schedule and without cost overruns, menus and kitchens designed around margin instead of guesswork, SOPs and teams strong enough to protect quality at every location, and franchise models that can actually survive investor scrutiny.

It is a philosophy earned the hard way, across Las Vegas kitchens, cruise ship galleys, McDonald’s boardrooms, ITC’s luxury properties, and a South Indian idli brand now standing at the edge of a public listing.

The Road Ahead

With hospitality and franchise consulting projects across six countries and recognition as an Indian Iconic Leader in 2025, Dave’s independent practice is still early in its own growth curve, and that is by design. His work with Mr. Idli continues as the brand pushes toward its 1,000-store target and its IPO milestone, even as he takes on new restaurant, QSR and hotel brands looking for the same outcome-first approach that built McCafe Asia and reshaped Mr. Idli’s trajectory.

For founders and investors who have a concept, a struggling site, or a P&L that needs a second opinion, Dave’s advice is straightforward: build the operational backbone before you chase the growth numbers, because the backbone is what the growth numbers actually depend on.
